Congratulations to apprentice pastry chef William Nickl of Mittagong for winning gold in the WorldSkills Australia National Championships in Brisbane. The challenging patisserie competition involved making a variety of desserts, and with an almost perfect score of 99.6 out of 100 for his magnificent creations William was the clear winner. William had spent months perfecting his showpiece, and this rigorous approach and high standards is reflected in his final score. William is an apprentice at Gumnut Patisserie, and the road to the National Championships started nine months ago when he won the Regional Championships. His national gold medal will be added to the many achievements and awards that Gumnut has won over the years - including those of his pastry chef parents Tracy and Vicki Nickl, who founded Gumnut Patisserie. Gumnut is deservedly well known in the Highlands and beyond for its exquisite pastries and bakery items. They are driven by excellence and innovation, combining traditional and contemporary methods along, with sourcing the best ingredients and pursuing sustainability in reducing food waste. These values are passed on to apprentices including William, who is well placed to carry on the family legacy of being the best in the industry.
